A Quick History of New Jersey Pizza
The history of pizza in New Jersey can be traced back to the early 1900s when Italian immigrants started to arrive in the Garden State. When they got here, some experienced pizza makers started opening up never seen before pizzerias. These early pizzerias were essentially located in areas where there were predominantly Italian populations, such as Jersey City, Newark, and Trenton.
The first know pizza place in NJ was Joe's Tomato Pie located in Trenton. Joe's opened its doors in 1910.
Papa's Tomato Pies (which opened its doors in 1912) is the oldest surviving pizzeria and restaurant that is still in operation until this day.
One can speculate that Papa's (among a few others) was the first to create one of the (now) most well-known styles of pizza in New Jersey which is called "Tomato Pie" or the "Trenton pie". The tomato pie is a specific type of pizza where the cheese is placed directly on the dough first and then the sauce is placed on top. The sauce was fresh, uncooked, simple (without a lot of ingredients to let the tomato shine and a little sweet. Some tomato pie barks dust the pie lightly with freshly grated parmesan cheese before cooking.
One of the oldest thin crust style pizzeria restaurants is the family-owned Federici's in Freehold NJ which has been making marvelous unique one-of-kind thin crust pizzas for over 100 years.
Over time, the popularity of pizza spread like wildfire throughout the state, and today there are one or two (or more) pizzerias in just about every single town in New Jersey.
Another famous style of pizza believed to have originated in Sicily, that has been said to have been first brought to New Jersey is the "Sicilian pizza" which is a large, square-shaped pizza that is typically made with a thick, doughy crust and topped with a variety of ingredients, including tomato sauce, cheese, and meats.
